Happy 2014

Rocky Road cake pops

Adapted from this lovely book "Bitesize", my version of rocky road cake pops has a chocolate brownie cake base, coated with dark chocolate and topped with chopped pistachios, crushed peppermint candies and mini marshmallows.

Step 1: Bake the chocolate brownie cake.


Step 2: Crumb the cake.


Step 3: Add buttercream to the crumb mixture.


Step 4: Roll mixture into balls.


Step 5: Prepare the chocolate mixture.


Step 6: Insert pop sticks into cake balls.


Step 7: Coat the pops with chocolate and sprinkle with chopped pistachios, crushed peppermint candies and finally mini marshmallows. Chill in refrigerator overnight.
