Longevity Shou Tao birthday cake
(Longevity Peach bun cake)

Celebrated my father's birthday with this Shou Tao longevity cake. He was very pleased with it. HAPPY BIRTHDAY!!

Base cake -Carrot cake
Recipe taken from Martha Stewart, this carrot cake is moist and fragrant with ginger,orange zest and cinnamon.
Putting all the ingredients together

I baked the cake in a square tin so that it is easier to sculpt the peach shape.

The cake was then frosted with cream cheese frosting.

After chilling for an hour, the cake was covered with fondant and sprayed with red dye to complete the peach bun or shou tao appearance.

Two fondant leaves with a stem were added to the peach.
A pink fondant was used to cover the base.

Strawberry and kiwi fruit jam

Korean strawberries with their bright red colour will go well with Australian grown golden kiwi fruits; making a good combination for a deliciously sweet jam.
